Who doesn’t like a spicy crunch, a little surprise that tickles our senses? Pickled red onions are really easy to make and they keep in a refrigerator for a long time. Just a couple of pieces add an extra zing to your sandwich, pizza, salad, or pretty much any meal.

Ingredients

  • 1 red onion

  • 1 cup apple cider vinegar

  • 2 tbsp balsamic vinegar

  • 1/2 tsp maple syrup

  • 1 whole dry chili pepper

  • salt

  • black peppercorns

Directions

  • Thinly slice onion and place in a jar.
  • Place a small saucepan with the vinegar and all the spices on low heat and bring almost to boil.
  • Pour the hot mixture over the sliced onions till they are submerged. Let it cool, cover with the lid and refrigerate for at least 24 hours before tasting. Flavor gets stronger with time.
  • Top off your avocado toast, salad, or taco – those are great pretty much on anything! Enjoy!
