  • 1 tsp oil
  • 1 medium onion
  • 3 cloves garlic
  • 1 jalapeno
  • garam masala
  • curry powder
  • coiander
  • ginger powder
  • salt
  • 1 block tofu
  • 1.5 – 2 lbs spinach (or mixed greens )
  • 1/2 – 1 cup coconut milk
  • 1 tsp arrow root powder (optional)
  1. Finely chop onion and garlic and start saute’ing on medium heat.
  2. When onions start to get glassy, add finely chopped jalapeno and all the spices. Saute for a minute and then add cubed tofu. Saute for about 15 – 20 minutes stirring occasionally.

  3. While tofu is cooking, blend fresh spinach in your blender. Use as little coconut milk as possible. You should have about 4 – 5 cups of thick fresh spinach smoothie.
  4. Pour spinach over tofu, stir well and cook for about 5 – 7 minutes or till it starts bubbling. Adjust spices to taste. If you like a thicker consistency, add arrowroot powder and cook for another minute.
  5. Serve right away with roasted sweet potatoes, veggie patties or on its own. Enjoy!
