Palak paneer is a classic Indian recipe that is equally delicious as a side and main dish. Slowly sauteed tofu in spices adds extra flavor layer and seamlessly integrates with the traditional ingredients.

- 1 tsp oil
- 1 medium onion
- 3 cloves garlic
- 1 jalapeno
- garam masala
- curry powder
- coiander
- ginger powder
- salt
- 1 block tofu
- 1.5 – 2 lbs spinach (or mixed greens )
- 1/2 – 1 cup coconut milk
- 1 tsp arrow root powder (optional)
- Finely chop onion and garlic and start saute’ing on medium heat.
- When onions start to get glassy, add finely chopped jalapeno and all the spices. Saute for a minute and then add cubed tofu. Saute for about 15 – 20 minutes stirring occasionally.
- While tofu is cooking, blend fresh spinach in your blender. Use as little coconut milk as possible. You should have about 4 – 5 cups of thick fresh spinach smoothie.
- Pour spinach over tofu, stir well and cook for about 5 – 7 minutes or till it starts bubbling. Adjust spices to taste. If you like a thicker consistency, add arrowroot powder and cook for another minute.
- Serve right away with roasted sweet potatoes, veggie patties or on its own. Enjoy!
