If you ever tried Brazilian cheese bread or pão de queijo in your pre-plant-based life, you know how addictive, comforting, and delicious it is. Achieving a crispy crust with chewy insides without eggs, cheese and butter was quite a challenge. But here it is! Simple ingredients and oh sooo goood!

Ingredients

  • 1 1/2 cups tapioca flour

  • 1/2 cup flax meal

  • 1/4 cup nutritional yeast

  • 1 tsp baking powder

  • salt

  • spices (optional see notes)

  • 1 cup hot water

  • oil

Directions

  • Pre-heat over to 400 F.
  • Mix all dry ingredients, salt and spices together.
  • While mixing, start adding hot water with oil. If you are not up for a good workout, a standing mixer is recommended for this step. Stir continuously for about 3 – 4 minutes. Dough consistency should be rubbery and not too liquidy.
  • Scoop dough onto parchment paper-lined baking sheet forming 1 to 2 inch diameter rolls.
  • Bake for about 20 – 25 minutes depending on how big your rolls are.
  • Best when still warm out of the oven – enjoy!

Notes

  • You can make flavored Brazilian cheese bread by adding garlic powder, onion powder, dried mushroom powder, hot pepper flakes, or any other spice – be creative!
