Make your weekend brunch extra special with those waffles. Soft inside, crispy outside with a very refined flavor but with no added sugar. Get creative with your toppings and don’t feel guilty about that extra drop of maple syrup.

Recipe by lentils and love

Ingredients

  • 1 cup oat flour

  • 1/2 cup sorghum flour

  • 1/4 cup teff flour

  • 1/4 cup buckwheat flour

  • 1/4 cup flax meal

  • 1 tsp baking powder

  • 2 tbsp apple sauce

  • 1 tbsp oil

  • 1 tbsp tahini

  • 1 cup plant based milk

  • 1 cup seltzer water

Directions

  • Preheat waffle maker to high.
  • First, mix all the dry ingredients and then slowly start mixing in all the wet ingredients.
  • Bake on high between 4 to 7 minutes depending on your waffle maker.
  • Serve fresh with fruits, nuts, seeds, and of course maple syrup. Enjoy!

Notes

  • Waffles freeze really well. Cool completely on a cooling rack, seal in a ziplock, and freeze. When ready to eat, microwave for 10 seconds and then toast.
