This dessert will not disappoint even the toughest non-vegan crowds. It’s almost tiramisu-like but with a twist as most of the coffee flavor is in the mousse.

The flavors are complex and your guests will think that you have spent hours in the kitchen. Little did they know that it took less than 20 minutes to whip up!

Ingredients

  • crust
  • 1 cup walnuts

  • 3 dates

  • 1/4 cup hot water

  • 1/4 cup oatmeal

  • 1/4 cup hemp seeds

  • 1/4cup coffee liquor

  • mousse
  • 1 1/4 cup cashews

  • 1 tsp instant coffee

  • 1/2 cup plant based milk

  • 2drops almond extract

  • coco powder (optional)

Directions

  • Soak cashews a few hours before. If you don’t soak them, rinse in hot water right before prep.
  • Remove pits from dates, place in a bowl and pour 1/4 cup of hot water over them. Let them soak for a few minutes.
  • Add to food processor walnuts, oatmeal, and hemp seeds and pulse few times. Then add coffee liquor and dates. Save the water that they were soaking in! You will use it for the mousse.
  • Place the crust mixture into small mason jars or ramekins and press tightly to the bottom and set aside.
  • Add instant coffee to the water saved after soaking dates. You might want to microwave it for a few seconds as it makes it easier to dissolve coffee.
  • Add to blender cashews, milk, dissolved coffee, and couple of drops of almond extract. Blend till cashew become silky smooth.
  • Spoon the mousse over the crust. Tap each jar to even out the mixture and place in the fridge for at least 30 minutes before serving. For best results, make it a day ahead.
  • Right before serving, sift some cocoa powder on top.
  • Enjoy!

Notes

  • The longer you soak the dates, the sweeter the water will be. If the mousse is not sweet enough for you, maple syrup is always a good option to add while blending.
  • The sweetness also depends on the type of plant-based milk – oatmeal or vanilla soy will definitely not require extra sweetness. The least recommended for this recipe would be coconut milk as its flavor can overpower the rest of the desert.
