This bread works great as a breakfast snack or as an appetizer with a cheeseboard. Fluffy and comforting will bring a smile to your face at any meal.

Ingredients

  • 1/2 cup walnuts

  • 3 – 5 pitted dates

  • 3 cups rolled oats

  • 1/2 cup almond flour

  • 1/4 cup flax meal

  • 1/4 cup brown rice flour

  • 1 tsp baking soda

  • 3/4 cup plant based milk

  • 1 cup seltzer water

  • 1/2 lemon

  • 1 tbsp apple cider vinegar

Directions

  • Preheat the oven to 350F.
  • Roughly chop dates and walnuts, set aside.
  • In a food processor, pulse oats till they are consistency of a coarse flour.
  • In a bowl mix all the dry ingredients, make sure all the lumps are gone.
  • Then add to the dry ingredients walnuts, dates, and liquids. Gently fold ingredients – make sure everything is mixed but do not overwork the dough.
  • Place parchment paper on a baking sheet and transfer the dough to the paper. With wet hands, smooth out the bread surface.
  • Bake for about 45 – 55 minutes. When done, place on a cooling rack and let it rest for at least an hour before eating. Enjoy!

Notes

  • You can substitute dates and walnuts with just about any other dried fruit (apricots, cranberries, figs, etc) or other nuts (pecans, hazelnuts, almonds, etc). Also, you can try more savory flavors like sundried tomatoes or olives. All work well with this recipe.
