mini cinnamon rolls

Fresh out of the oven or the next morning with the coffee – either way those cinnamon rolls always bring comfort and lift your mood.

Ingredients

  • 1 cup oat milk

  • 1 tbsp yeast

  • 2 cups gluten-free flour

  • 1 tbsp psyllium husk powder

  • 6 tbsp melted vegan butter (split in half)

  • 1/2 tsp vanilla extract

  • 1 tbsp maple syrup

  • 3 tbsp sugar

  • 1/2 tbsp cinnamon

Directions

  • Warm up milk to lukewarm, add yeast and set aside for about 5 minutes.
  • In a bowl, mix flour and psyllium husk powder then add half of the melted butter, maple syrup, vanilla extract and milk with yeast.
  • Knead with your hands, form a dough ball. Set aside covered with a clean cloth for about 30 minutes.
  • In a small bowl mix sugar and cinnamon
  • Roll out the dough into a think rectangle, spread the melted butter and the sugar and cinnamon
  • Roll the dough into a log, cut it into a 1/2 inch pinwheels and lay them flat on the parchment paper. Cover and set aside to rise for about 30 – 40 minutes.
  • Pre-heat the over to 375F
  • Before starting to bake, spread some extra melted butter on the top. Bake for about 35 – 45 minutes or till golden. Enjoy!
