Fresh out of the oven or the next morning with the coffee – either way those cinnamon rolls always bring comfort and lift your mood.

Ingredients
1 cup oat milk
1 tbsp yeast
2 cups gluten-free flour
1 tbsp psyllium husk powder
6 tbsp melted vegan butter (split in half)
1/2 tsp vanilla extract
1 tbsp maple syrup
3 tbsp sugar
1/2 tbsp cinnamon
Directions
- Warm up milk to lukewarm, add yeast and set aside for about 5 minutes.
- In a bowl, mix flour and psyllium husk powder then add half of the melted butter, maple syrup, vanilla extract and milk with yeast.
- Knead with your hands, form a dough ball. Set aside covered with a clean cloth for about 30 minutes.
- In a small bowl mix sugar and cinnamon
- Roll out the dough into a think rectangle, spread the melted butter and the sugar and cinnamon
- Roll the dough into a log, cut it into a 1/2 inch pinwheels and lay them flat on the parchment paper. Cover and set aside to rise for about 30 – 40 minutes.
- Pre-heat the over to 375F
- Before starting to bake, spread some extra melted butter on the top. Bake for about 35 – 45 minutes or till golden. Enjoy!
