There are very few desserts that allow for zero guilt and 100% deliciousness. These baked donuts with a blueberry glaze will bring you lots of careless joy. Have them with your morning coffee and as an afternoon treat; no need to limit yourself with this dessert.

Ingredients

  • donuts
  • 1 cup oat flour

  • 3/4 cup sorghum flour

  • 1/4 cup almond flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tbsp flax meal

  • 1 cup apple sauce

  • 2 dates

  • 1 tbsp apple cider vinegar

  • 1 cup plant based milk

  • 1 tbsp melted coconut oil

  • 1/2 tsp vanilla extract

  • 1/4 cup cashews

  • 1/4 cup blueberries

  • 1 tbsp maple syrup

  • 1 tbsp plant based milk

  • 1 tbsp lemon juice

Directions

  • Pre-heat oven to 375 F.
  • In a bowl mix all the dry ingredients (including flax meal) and set aside.
  • Place rest of the ingredients in a blender and blend till dates are completely disintegrated.
  • Then, add dry ingredients to the mix and blend on medium until everything is well combined and frothy. Making the batter in a blender is the secret to this recipe.
  • Pour or spoon the batter into the donut baking pan and then tap against a flat surface to even it out.
  • Bake for about 20 – 25 minutes or till almost double in size and golden brown.
  • After removing from the oven, leaving in the pan for a couple of minutes and then transfer to a cooling rack.

  • Add all ingredients to a blender and blend till silky smooth.
  • Pour the glaze on a plate and dip each donut. Enjoy!

Notes

  • The blueberry glaze will turn dark blue and lose some of the shine if not covered. It does not affect the flavor.
